5 slices of pork bacon
2 tablespoons of minced garlic
2 tbsp of chopped onion
5 cups of chicken broth
1 pack of fresh turkey tail (not frozen)
5 bunches of greens of your choice. (Collards, Turnips, Kale or Mustard)
Seasoning salt, kosher salt, and pepper to taste
1/2 tablespoon of cayenne red pepper flakes (optional)
Cook bacon in a skillet. Once done, remove bacon, crumble, and set aside. Leave bacon grease in the pan and add garlic and onion. Sauté until light brown. Turn off the heat once done.
In a separate pot, pour in the chicken stock, add the turkey tail, crumbled bacon, and bacon grease mixer. Cover the pot, and simmer for 30 minutes.
Add any mixer of greens to the pot, and cook on medium-high.
Let the greens cook down for about 30 minutes.
Reduce heat to simmer, stir greens, and season with salt, pepper, and seasoning salt to taste. Mix in red cayenne pepper seasoning if desired. Continue to simmer until the greens are at the desired texture.
